fol 356 The waye to preserve Quinses.
Recipe one hundred of the sweetest and mellowest peares
that yow can get, and if they be watrish the are
the better, pare them and core them cleane and
put them into a panne of earthe suche a one
as is called a milke panne and let them seethe
till they be all to peeces, ever brusing them with
a flatt slise of woode. When they are sodde
all to peeces passe them through a strayner
not strayning them at all. When the Ioyce
is gone throughe put yt into the same panne
againe and seethe it to a syrop which wilbe in
ij. howers space. Yow must put to yt, quarter of
a pynte of rose water symple .ij. graynes of
muske, Cloves iij. or iiij. brused Cynamom
brused ij. drammes and when it is enoughe yow
shall know by this meanes take a lyttle of
yowr knyves poynte and lay yt vpon a sawcer
and if yt sticke or Cleave it is enoughe
if not it is not enoughe this Composicion is preserv
When yow will preserve yowr Quinses yow must
vse them on this facion take yowr Quinses and
seethe them verey tender and let them drayne
and then seethe them in this syrop half an
hower and then kepe them in pottes of stone.
